Pan-Asia is hosting a talk exploring the origins of chop suey* today in Olin 110 at 12:15 as strategy for Chinese American entrepreneurs to attract a broad base of customers and tourists by marketing their ethnicity for non Chinese. The prevalence of Chinese restaurants and tastes for Chinese food today reveal the success of their efforts to integrate and claim a share of American markets.
*Chop suey is often maligned as an inauthentic, made-up American version of Chinese food.
